Last Minute Valentine's Dessert

2/14/2012

I really enjoy baking and since last year I've been hooked on making my own ice cream cakes and dessert (which is ironic because I am lactose intolerant). Today I am sharing a quick and easy dessert you can make...even at the last hour.
What you need:
- Butter (optional)
- Coookie crumbs (optional)
- Ice cream of your choice
- Heart shaped cookie cutter
- Chocolate chips, butterscotch chips or what ever you have (optional)
- Chocolate syrup  (optional)
Directions:
Take out your ice cream and leave it on the counter to soften just a little. Meanwhile, melt about a tablespoon of butter and add about 3 tablespoons of cookie crumbs. Mix until it is sticky but crumbly. Lay your cookie cutter on same wax paper or a plate and fill with cookie crumb mixture. Pat it down until its flat along the bottom of your cookie cutter. Take a teaspoon and scoop out some softened ice cream and fill the cookie cutter. Top it off with some chocolate chips and stick it in the freezer. It takes about 15 minutes to harden enough to pop it out of the cutter. Top with a little chocolate syrup and voila! A quick and tasty heart for you and your sweetheart. Bonus: If you only have time to make one, don't worry, it's just that more romantic. Enjoy and Happy Valentine's Day!
Note: If all you have is ice cream and a cookie cutter, it will still work and still look good. It is a little harder to pop out of the cutter without the crumb base but just run a knife around the edge before popping it out.

looks delish! I know it's after Valentines Day, but any day is a good day for this treat!

Thanks! I am thinking of making it a monthly treat...for the kids of course :)
